Another one would be a gourmet grilled cheese using cheddar, pepperjack, provalone and swiss.Use Thin slices of each cheese, pre butter your bread. I like honey whole wheat. On a flat griddle or big skillet I lay the butter side of each slice of bread onto the heated surface and place the cheeses. I just fold them together and it's done.

how about grilled portabello mushroom sandwiches. Chop 1/2 an onion in long pieces, 1/2 a bell pepper and throw it in the pan with some virgin oil and some of the larger sliced mushrooms you can find in the produce section. it only take about 10 minutes to cook. Since your not dicing too small, it is real fast to make. While the mushrooms cook, make some dirty rice and grill a bun. Round trip about 15 -20. I sometimes spice them up with some pepper-jack.
