It's just a matter of finding people who have that turned on or telling people you want to email to turn it on. When you're married (I think living together probably qualifies too), you see your spouse at their most vulnerable, and you realize more that they're just people too and that they're largely like you. I think if you're happily married and secure in your relationship, you're more free to be honest with things like that and not have to hide it from your spouse for fear they will get angry or jealous. Plus it just feels good to flirt or be flirted with. Then again, there are some people who are unhappily married who do it to make themselves feel better about themselves or to get something they feel like they're missing in their relationship.
