Reader recipe: Spicy SPAM Feta Burger

Who says SPAM can’t be creative? Angeliki Stergiopoulos of Indianapolis won first place in the Indiana State Fair’s Great American SPAM Championship Kids Division for her inventive feta burger — and you don’t have to be a kid to enjoy it.

Spicy SPAM Feta Burger

(Makes 1 large or 2 smaller sandwiches)

For the burger:

1 12-ounce can SPAM Low Sodium, ground

1/2 teaspoon granulated garlic

1/2 teaspoon black pepper

1 tablespoon Greek oregano

2 teaspoons parsley, finely chopped

3 tablespoons bread crumbs, homemade

For the spread:

6 tablespoons mayonnaise

1 teaspoon hot giardiniera (add more for an extra-spicy flavor)

5 tablespoons feta cheese, crumbled

Parsley, chopped

For bread and toppings:

8-inch hoagie-style toasted bread,

or two 6-inch versions

Sliced tomatoes and lettuce

1. In a bowl, mix together ground SPAM, granulated garlic, black pepper, Greek oregano, parsley and bread crumbs. Form the mixture into 1 long or 2 smaller patties, depending on the roll size you plan to use. Place patties in a large skillet over medium heat; cook until golden brown. Remove from heat.

2. In a separate bowl, mix together mayonnaise, hot giardiniera, feta cheese and chopped parsley. Place the SPAM burger on the toasted hoagie bread. Add the spread mixture, and top with tomato and lettuce.
