My favorite cheese is muenster, and I like it plain or sliced thick and thrown on a sandwich. I don't really have any cool cheese anecdotes though. http://en.wikipedia.org/wiki/Muenster_cheese
Any one know what kind of cheese Mexican restaurants use? That stuff is awesome. The grocery stores sell similar looking white melting cheeeses, but they never taste anywhere near as good. I wonder if they sell this stuff at the Mexian grocery stores in town.
Almost anything from Capriole farmstead goat cheese. It's made in southern Indiana, and their cheese is incredible -- even the chocolate variety! But I love the Sofia.
