Let's try this again, shall we?
Let me start by saying I'm touched, honored, and surprised at the online response to our restaurant review. I guess I didn't realize so many of our guests would be Indy.com users, or vice versa. Thanks all for the great comments. We sure to try to be the real deal, and it warms my heart to see people recognize it.
Something you may not know about Papa Roux: We're very family-owned-and-operated. We're about as "Mom & Pop" as it gets, and by that I mean Mom works in the mornings, and Pop works in the evenings. It really is about as small as it can be. Partly due to a lack of funds to hire help, and partly due to a desire to keep it real.
It's been fun (and a little maddening) growing the restaurant. Sometimes we're understaffed, and customers pay the price those evenings. We ask for your patience as we grow into what will eventually be a smooth operation. It's hard to know when a one-customer-per-hour evening will suddenly explode into half the city in our doors within 30 minutes. You keep us on our toes, for sure!
Some of you watched us grow from our earliest days, with no air-conditioning, no dining room, battling 105 degree temps in our kitchen while we struggled to keep food coming. Contrasted to today, with fancy in-house dining in REAL DISHES (heh), fountain drinks, and an expanded menu... it's fun to look back on where we started.
Please do stop in and meet us. Really meet us. Introduce yourself. It's the one thing, time and again, that we hear makes us really stand out -- we're not in the business of selling food. We simply enjoy the experience of serving good food to good people. Oh, and while you're in, be sure to sign our graffiti wall!
